Ahhh, Summertime. Did you grow or pick a box of peaches this year? Perhaps you are Canning Peaches this season, but have you ever considered making a peach salsa recipe?
You may eat it fresh all summer and by Canning and Preserving it, enjoy when you need it most, during a freezing, boring Winter.
There are countless variations on dessert Fresh Salsa Recipes using peaches. You can take the basic ingredients, which are peaches, Peppers such as red, yellow and orange bell, jalapeno, onions and cilantro.

You can even add honey for sweetness or Chipotle Chilies for spiciness. You will need an acidic liquid too, fruit juice and a prepared sugar syrup are commonly used.
When choosing your peaches, make sure they are slightly soft and ripe but not mushy or bruised. You will want to remove the skins, and this is most easily accomplished by blanching them in hot water until the skins split and agree to slip off easily for you. Blanch in a rolling boil for 3-5 minutes.

Peach Salsa
2 Pounds fresh Peaches, skins removed and diced
2 Medium tomatoes, ripe, chopped
1/2 Cup Red Onion, diced
3 Scallions, sliced fine (use it all)
1 Cup Red, Yellow, Orange or Green Bell Pepper medley
2 fresh Jalapeno Peppers, minced
1/4 Cup Extra Virgin Olive Oil
1/8 Cup Cilantro, chopped fine
Juice of 1 Lime
1/2 Teaspoon Salt
1/2 Teaspoon fresh Ground Pepper, to taste
Cut the peaches into cubes, Tomatoes too, and the peppers into a small dice.
Onions follow suit, and if you are using any strong flavors like chipotles, ginger, jalapenos or garlic you will want to mince them so no one gets a big dose of one of these power packed flavors!
You have quite a bit of leeway to make a fine peach salsa. The best salsa recipe I have had in the peach dessert style used honey and fresh ginger for a sweet and spicy salsa recipe.
