You came here looking for a great Mexican salsa recipe and I aim to please.

I am not giving you the bland Pico de Gallo treatment here, this is a real authentic version of Mexican table sauce that is always present alongside the many and varied South American dishes.

This recipe for salsa rocks! I would not say it is an easy salsa recipe, but it is the best salsa recipe around in the Mexican version.

The following ingredients can be wielded in whatever amounts you choose, based on what you have on hand and what your tastes are:

  • Roma Tomatoes or regular Vine Tomatoes work as well
  • Tomatillos for an explanation see this Salsa Verde Recipe
  • Red Onion or Shallots
  • Bell Peppers, red, yellow or orange, medley is preferred
  • Jalapenos
  • Poblano Peppers
  • Serrano Chilies
  • Ancho Chilis
  • Black Beans
  • Cilantro
  • Garlic
  • Lime Juice

    Here we go. The most crucial part of this recipe is to char the vegetables. You can toss them on the grill, fry in a pan on an electric stove, or sear them over an open flame on a propane stove.

    Don't be shy, we want them good and charred on each side. This is a time saver too, as you won't need to peel the chilies if you char them.

    It gives the skin a great smokey flavor so leave the skins on and save a step.

    Mexican Salsa Recipe

    4 Roma Tomatoes

    4 Tomatillos

    1 Small Red Onion

    1 Medium White Onion

    3 Jalapeno Peppers

    1-3 Serrano Peppers (adjust to your preference for fire)

    1/2 Red Bell Pepper, chopped

    2 Garlic Cloves

    Juice of 2 Limes

    4 Tablespoons Cilantro, chopped

    2 Tablespoons Olive Oil

    Salt and Pepper

    Char your onions, peppers, garlic, tomatillos and tomatoes. Let cool, then slice off the tops and discard. (Give them over if you have chickens). Toss all ingredients in a blender and give a whirl until it is a rough but almost smooth consistency.

    There you go, you now have an authentic restaurant quality Mexican salsa to serve family and friends. Don't forget the Mojitos!
