How to Make Dough for Bread, Rolls and Pizza
If you want to learn how to make bread to eat better and save money, you have come to the right place. The human tendency to let others do for us what we could do better and cheaper sometimes gets to me. We have forgotten how to save on food like our grandparents practiced.
How is it that we have been lulled into paying upwards of $3.79 for a so-so loaf of grocery store bread? At my house, it had to stop as my family can go through two loaves a day with little problem. And they don't eat the crusts either.
Learn how to make pizza dough and how to bake bread, do it once a month and freeze it! Dough keeps very well wrapped in a zippy bag and refrigerated or frozen. You can then thaw it, let it rise and bake! Save even more money on your food bill by learning how to make noodles

How to Make Dough:
2 1/4 c. warm water
5 c. bread flour
1/4 c. olive oil
3 tbs. sugar
2 1/4 Tsp. dry yeast
1 tsp. salt
1/4 c. cornmeal
pizza pan or pizza stone

The Sauce:
2 c. tomato or spaghetti sauce
Fresh Garlic to Taste (about 2 tsp.)
Italian seasonings you have on hand (rosemary,parsley, oregano, Italian blend)
Turn oven on to 300 degrees for 3 minutes only-about the time it takes you to mix the flour and water mixture. Then turn it off!
Make the water very warm but not hot-we don't want to kill the yeast but warm it so it activates nicely. Mix water, yeast, sugar and olive oil in a bowl, stir until dissolved.
Put the flour in a large bowl, add salt to the flour and mix lightly. Add wet ingredients to flour, mix with wooden spoon till soft and elastic. Note: When you are first learning how to make dough, it is not uncommon to have to either add more flour if it too sticky to work with, or more warm water if too dry.
Spread a thin layer of flour on your clean work surface and start kneading! You can even get into the spirit by slamming the dough down a few times to release the gluten in the flour. That way anyone watching will not know you are just learning how to make dough for the first time.
Form into a ball, put back in your bowl, cover with a dishcloth and put in your slightly warm oven that is turned off. Set the timer for 45 minutes. At the end, take out the dough, punch it down and prepare according to what you are baking. If you are learning how to make bread, divide the dough in half, roll and tuck under, and place in two greased bread pans. Let rise and bake.
If you are learning how to make pizza dough, you can decide now if you want one huge or two smaller 12" pizzas. If it's the latter, divide and roll out two circles. Prepare the pans by adding 2 tbs. each of olive oil, spread all over and sprinkle with corn meal. Carefully place the rolled dough on the pans.
I bake my crust for a short time before adding sauce and toppings as bread dough can be tricky to cook with that much sauce and cheese loaded on it. Pre bake for 6-8 minutes at 375 degrees, take out, spread the sauce, cheese, and toppings like pepperoni, salami, olives etc. Brush edges with olive oil and bake again till bubbly and golden, about 12 minutes.
