I only grew up around canning because I spent many childhood summers with my beloved Grandma at the Oregon Coast. My Mother didn't can, but her Mother sure did.

I was too little those summers to take in much about home canning, and Grandma didn't make me either. She knew I was most concerned with when we could leave for another day at the beach.

So like any smart woman, she taught me to get the housework done before we could go. But I digress. You are here because you want to learn all about Canning and Preserving, or if you already know how, you need home canning recipes and we are going to deliver!

Are you a country or a city dweller? Whether you have a big garden on the back 40 or a raised bed plot in a small backyard, you can turn those peppers and tomatoes into lovely home canned creations.

Start with Jam. Seriously. I want to get you hooked, and making jam first is going to do it for you. Strawberry jam, raspberry jam, blackberry jam, they are so easy and so satisfying to put up, especially for first timers.

You don't need to be scared the pressure canner is going to blow up, because you will only be using a pot of boiling water, otherwise known as a water bath canner.

When I got married, I joined my husband on our 40 acre farm and began thinking about, um, among other things, learning how to can. I started with applesauce, using my Grandmas hand powered applesauce sieve.

What Work!

I will never forget my sister, who came over to drop off her toddler with me, and how she smirked and smiled wide and said how "quaint" of me to can applesauce!

Fine. At least I would have self sufficiency skills, and I didn't stop there. I canned Peaches, raspberries, Spaghetti Sauce, even Salmon, you name it. And you can too.

Home canning is one of the arts that is not lost after all. Probably because people still like to eat as much as our ancestors did. And because canning is a creative and artistic endeavor which makes it compelling once you have the canning bug.

Start off with canning High Acid Foods as they are the easiest and have less risk of botulism contamination due to the acidic nature of these foods.

Berries, cherries, plums, pickles, Peppers , Tomatoes and tomato sauces (without meat). The list of home canning recipes is long, but it is fun to put the brightly colored jars on your pantry shelves and feel the satisfaction that comes with self sufficiency. Pop open a fresh jar of Summer this Winter and you will know how worth it home canning truly is.
