Elegant Almonds and Green Beans
1 1/2 pounds fresh green beans, trimmed and rinsed,/li>
3 Tbs fresh creamery butter
3/4 tsp lemon pepper
2/3 cup sliced almonds
1. Steam in a pan with 1" water or use a dedicated vegetable steamer. Cover and steam until tender/firm, about 8 minutes. Remove from heat and place the beans in a covered dish. All green bean recipes that involve steaming them should be watched carefully so they don't overcook.
2. Melt the butter in a frying pan over medium heat. Saute the almonds until lightly toasted and season with the lemon pepper. Pour over the green beans and toss lightly to coat. Serve immediately.

Pickled Green Crisp Beans
3 lbs fresh green beans
3 cups white vinegar, distilled
2 1/2 cups water
1/4 cup iodized salt
2 cloves garlic, peeled and minced
1 handful fresh dill weed, chopped
1 tsp red pepper flakes -optional
1. Trim fresh green beans to fit your quart Ball canning jars with 1/2 inch head space available. One of the best fresh green bean recipe can also be found in the Ball home canning recipes book available online.
2. Sterilize jars in a water bath canner or hot dishwasher. Place lids and rings in a pan of hot water until ready for use.
3. Using a large pot, stir in the vinegar, salt and water. Add the garlic and bring to a full rolling boil. Put one dill sprig and a pinch of the red pepper flakes, then pack the beans in upright.
4. Pour the vinegar solution into the jars, leaving 1/2" head pace. Seal the jars with rings and lids and process in a pressure canner for the time indicated in the instruction manual for your canner type and your altitude.
5. Test jar lids with your finger to ensure all are properly sealed. They should not pop up and down. If one or two do not seal you can put it in the fridge and use it up that week, or you can use a new lid, reprocessing for the entire time once again.
