If you are as busy as I am, you probably dread coming home to the second shift and making a great dinner for your family, which requires that you have:
A. Planned the menu in advance.
B. Done the shopping or remembered to thaw something out the day before.
C. Dinner also requires that you have done the dishes and cleaned the kitchen so you can mess it up again.
D. Oh, and you have to have the energy to make this meal after a long day at work or a long day at home, at work.
E. Remember that while you are cooking this meal you also have three children who need help with spelling, math and reading, and one who is sucking up your energy by trying to get out of playing his trumpet tonight. Then when you win the battle you have to listen to it while you make dinner!
Do this 5-7 nights a week and somethings got to give. Let's let it be the crock pot, not you! Yummy cheap meals can be had by making crock pot meals and just adding some homemade bread..
Crock pot meals can be started the night before if you want your meal ready at noon the next day, or you can start it in the morning if you want it hot and ready at dinnertime.
Here are some basics when working with crockpot stew and most crock pot meals involving meat and vegetables:
You start by browning the meat in a skillet in a little oil first as this seals in the flavor and cuts the cooking time a bit. The idea is not to brown all the way through, we don't want tough meat.
Vegetables cook slower than meat, so put them on the bottom and around the sides of the roast or chicken to ensure they are done when they should be. Do not lay them on top.
Use water, beef or chicken broths, spices, garlic and Worcestershire to add wonderful flavors to your soups, stews and roasts.

Resist the temptation to open the lid to check on it's progress, as this lets the heat escape so you will have to add cooking time. Most meat and vegetable crock pot meals are done after cooking 8-10 hours on low or 4-5 hours on high.
A trick I learned: If you need to speed things up, place a sheet of tin foil shiny side down, just under the lid. It will reflect heat down on the food and shorten the cooking time. If it truly is too late to start crock pot meals, than check out our quick dinner recipes here

Other than the popular crock pot stew or crock pot baked beans recipes, here are some little known non- meat and vegetable crock pot meals that you may not have thought of!
Crock Pot Green Beans
When your garden is overflowing with green beans is a great time to start this side dish as you make delicious crock pot meals. I sometimes keep two slow cookers going, one is the main dish and the other a side.
2 pounds fresh string beans, ends snipped
8 slices of bacon, chopped in 1" cubes
1 medium onion, chopped
2 tablespoons diced garlic
2 tablespoons olive oil
salt and pepper to taste
Brown the bacon lightly, but do not cook through. Place on the bottom of your crock pot, then put all the other ingredients on top. Cover and cook on low for 6 hours. Your kitchen will smell wonderful!
Crock Pot Lasagna
Yes, you can and should make your lasagna in a crock pot! It is so easy and you don't have to go through the extra step of boiling and cooling the noodles. If you want to make super cheap meals check out our page on how to make noodles.
2 pounds Italian Sausage
1 large onion, chopped
32 ounces ricotta or cottage cheese
4 eggs
1 cup shredded jack cheese
3 cups shredded mozzarella
14 uncooked lasagna noodles
1-2 jars spaghetti sauce
1 tsp. each oregano, thyme, italian seasoning, parsley
salt and pepper to taste
Cook the sausage through, add the onion and stir on medium heat till softened. Drain. Add seasonings to the sauce, then add this to the meat and onion. Combine ricotta cheese with eggs, add parsley for color.
Then we just layer the ingredients in the crock pot. First 1/4 of the sausage mixture, one layer of noodles, 2 cups of cheese, 1/4 sausage, 1/2 the ricotta/egg mixture, noodles, and repeat the above until your ingredients are finished.
Save a little mozzarella to sprinkle on top. Cover and cook on low 6-8 hours or on high setting 3-4 hours.
