So Here is our Best Corn Salsa Recipe ever.
1 Cup Yellow Corn, fresh or frozen
1 Cup White Corn, fresh or frozen
15 Oz Black Beans, canned, drained, rinsed
2 Medium Ripe Tomatoes, finely chopped
4 Scallions, sliced fine
1 Red Onion, diced
1 small bunch Cilantro, finely chopped
1 Red, Yellow or Orange Bell Pepper, seed and chop fine
Juice of 2 Fresh Limes
3-4 Tablespoons Olive Oil, to taste
1 Tablespoon Garlic, minced
1 ripe Avocado, diced (optional)

Combine the corn, black beans, tomatoes, onions and peppers in a decorative bowl. Add Cilantro, garlic, lime juice, olive oil and avocado, if desired. Serve after 1 hour to allow flavors to meld. Enjoy!
