-4 quarts of washed, cored and chopped tomatoes (any kind will do)-1/2 cup of chopped onions-1/2 a cup of chopped green peppers-1/4 a cup of chopped celery-4 teaspoons o sugar-1/2 teaspoon of salt.

All you need to do is to throw all these ingredients into a saucepan and bring it to a rolling boil. After that, let it simmer for ten minutes before packing it into a hot jar. This recipe tastes great all on its own or you might want to serve them over a plate of Italian sausage and pasta.

Canning Tomatoes

-10 pounds of washed, peeled, cored and chopped tomatoes-3 medium sweet white onions, finely chopped-4 cloves of fresh garlic, minced (add more to taste)-1 teaspoon of oregano-1 teaspoon sugar-1 teaspoon salt-1 teaspoon black pepper-1/2 teaspoon crushed red pepper

Throw all the ingredients into your sauce pan and then simmer for two hours, stirring it to keep it from sticking to the bottom. You may choose to put the mixture through a food mill to get the seeds out at this point, though afterward you should return the mixture to the saucepan until it is thick.

Prepare the hot canning jars with the addition of citric acid or lemon juice before pouring the mixture in. This sauce tastes great combined with pasta and a hard Parmesan cheese.

Diced Roma tomatoes are an important part of many recipes, and whether you want to use them on their own as a dip later in the year or you have plans for a really wonderful salsa, you'll discover that canning Roma tomatoes that have been diced can be quite handy to you later on.

Canning Roma Tomatoes

-3 1/3 pounds of Roma tomatoes (these tomatoes should be peeled, and ideally de-seeded)-2 tablespoons of olive oil

You may want to add a cup of sweet white onions to the mix, or even something like corn or green peppers. It all depends on what you want to use the diced peppers for. For instance, if you are someone who likes the idea of having spicy diced tomatoes on hand, a few slices of jalapeno peppers might be a great addition. Diced tomatoes do very well when you are looking to make the Italian side dish, bruschetta, which contains yellow peppers and onions as well.
