Whether you love a simple salsa to eat with your tortilla chips or you have a taste for something more complex and sweet, never underestimate the power of spicy salsa.
A fresh salsa recipe can make a terrific dip, or you can try your hand at a mango salsa recipe, a mexican salsa, fruit salsa, peach salsa or even a tomatillo salsa!

Tomato salsas are widely sought after, and no wonder, because they taste great and can be adjusted to suit a wide variety of palates. Some people prefer a very mild, sweet salsa with barely any tingle at all, while other people aren't happy unless there is at least one habenero pepper in the mix!
A quick note, though: salsa could be considered a High Acid Foods if it were not for the low acid additions of onions, peppers and celery. Canning Roma Tomatoes is usually done in a water bath canner and is safe only with the addition of some lemon juice in each jar. Not all salsa recipes can be processed in a water bath canner, so check your Pressure Canning Instructions carefully.
If you have any addition of commonly used vegetables in your fresh salsa recipe that will be canned, you must process in a pressure canner.

Tomato Chile Salsa
10 cups peeled, cored and chopped tomatoes6 cups seeded, chopped chiles (you can balance this between mild and hot chiles to your taste)1 cup white vinegar3 teaspoons salt1/2 teaspoon peppersugar to taste Combine all the ingredients in a saucepan and heat it to a boil before letting it sit and simmer for ten minutes. This is a great fresh salsa recipe to keep on hand, and as long as you keep the proportions right, you can really adjust the taste of the recipe by deciding what kind chilies you want to use.

Whether you love fried green tomatoes or you'd just like to try something different, this is a great one to trot out at a party or just to enjoy on your own. Not only is it colorful, it can have a lovely bit of bite to it.Green Tomato Salsa 5 Cups green tomatoes1 Cup seeded, chopped long green chile peppers4 Cups chopped sweet white onions1 Cup bottled lemon juice6 Cloves fresh garlic, minced1 Tablespoon salt1 Tablespoon black pepperOregano leaves and ground cumin to taste
Throw all the ingredients together into the saucepan and stir them over a high heat until it comes to a boil. Then simmer it for twenty minutes, stirring occasionally.Process and presto! Your first jars of canning salsa have arrived! You can find lot's of recipes for tomatoes in the Ball Canning Recipes book, which you can find in most Canning Supplies stores online or in your local farm store.
When it comes to canning salsa, we mostly think of using fresh tomatoes, but you can make a wonderful fruit salsa as well. Mango is a high-acid fruit that cans very well, making it a great candidate for canning salsa.
Mango Salsa Recipe
6 Cups chopped, green mangoes1 Cup diced red bell peppers1 Cup very finely chopped yellow onions1/2 Teaspoon crushed red pepper flakes1 Teaspoon finely chopped garlic2 Teaspoons chopped cilantro1 Teaspoon diced mint leaves2 Teaspoons ginger, very finely chopped1 Cup light brown sugar1 Cup cider vinegarTake all these ingredients and combine them in a very large saucepan, bringing it to boil. Make sure that you keep stirring to dissolve the sugar, but as soon as you have a boil, reduce the heat to a simmer and leave it at that for about five minutes.
It is vitally important that you do not overcook this recipe, because you want the mango to stay relatively firm. This is why we started with green mangoes; ripe mangoes would make for an unpleasant soft texture. Then pour the mixture into the waiting jars.
