Rock Star Salsa

1 each red, white and yellow onion, chopped

7 lbs. Roma Tomatoes

2 jalapeno peppers, chopped and seeded

1 each red, yellow and green peppers, chopped

15 oz canned tomato paste

1/2 Cup white vinegar

2 tbs. fresh garlic, minced

2 tsp Salt

1 1/2 tsp ground cumin

1 tbs. cayenne pepper

1/4 Cup granulated sugar

1/4 Cup brown sugar

Ball canning jars and lids

Throw all the ingredients together into the saucepan and stir them over a high heat until it comes to a boil. Then simmer it for twenty minutes, stirring occasionally. After that, it can be poured into your sterilized ball canning jars, sealed and processed. Again, with regard to the tomato, canning Roma tomatoes will produce a superior tomatoe salsa than any other variety.

When it comes to canning salsa, we mostly think of using recipes for canning tomatoes, and maybe a pepper in the mix, but there are some really wonderful bean and corn salsas as well. This fresh salsa recipe cans very well, but you need to use a pressure canner for food safety, since it has vegetables in it. I'm Hot Salsa

6 lbs. Roma tomatoes, chopped

3 chili peppers, minced

3 15 oz cans white and yellow corn, garden corn preferred if available

3 15 oz cans black beans, drained

5 jalapeno peppers, chopped

2 vidalia onions, diced

1/2 cup sugar

3 cloves fresh garlic, minced

1 tsp each cayenne pepper and ground cumin

1 cup fresh cilantro, chopped

Take all these ingredients and combine them in a large saucepan, bringing it to boil. Make sure that you keep stirring to dissolve the sugar, but as soon as you have a boil, reduce the heat to a simmer and leave it at that for 10 minutes. Then pour the mixture into your sterilized Ball canning jars.Add 2 tsp lemon juice per quart jar of salsa and pressure can at 12 pounds of pressure. Check your canner's instructions for processing times at your particular altitude.

Canning salsa is a great way to use up all those tomatoes and vegetables that bear fruit in your garden, sometimes all at once!
