I have one member in my family, who shall remain unnamed, who gladly will polish off a quart per day of fresh canned peaches. If I were to continue the supply at $2.67 each quart it would cost me $18.67 per week to keep just one family member in peaches heaven! At that rate the other six of us couldn't have any. How many Canning Peaches and where do you get them? The best way is to find a U-Pick and pluck them straight off the tree. These will be the best value for your dollar. Next up, if you aren't near a U-Pick is to buy from a Farmers Market nearby. When preserving peaches, you will need some idea of how many peaches are in a bushel and how many canning jars to buy.A bushel weighs 48 pounds and will yield between 18-24 quarts of sliced peaches. Gather your Ingredients 14 pounds of ripe peaches 2 Pints Cider Vinegar 5% 10 pounds Sugar 8 Broken Cinnamon Sticks 8 Teaspoons Whole Cloves 2 Teaspoons Whole Mace Gather your Supplies Water bath Canner or large Pot 14 quart canning jars Lids and Rings Over sized Spoon and Ladle Jar Funnel, jar grabber and Lid Lifter Magnet Cheesecloth

Directions for Canning Peaches 1. Boil a large pot of water, and scald the peaches for up to two minutes for stubborn skins. Plunge into an ice water bath. Remove and slip the skins off. 2.Slice the peaches off the pit and remove it. Place sliced peaches in a large bowl and set aside. 3. Prepare the syrup solution. Mix the water, sugar and vinegar in a pot to heat. Stir until sugar dissolves. When canning peaches, you can substitute fruit juice like peach or white grape juice. You can also cut back the sugar by 50% and adding Splenda. Spiced peaches are supposed to be sweet, so don't cut back too much!. 4. Place the whole cinnamon sticks, mace and cloves in a cheesecloth and add them to the syrup mixture. 5. Heat to boiling then cover and cook 5 minutes. Lower the heat to Medium and cook an additional 5 minutes. 6.Add the peach slices to the syrup, bring to a boil again and for 10 minutes, cover and simmer gently until tender.
