Learn about canning green beans and Wow them with this Fresh Green Bean Recipe for dinner tonight.

What is the advantage to canning green beans as opposed to freezing them? Freezing Green Beans is fine, however your recipes for green beans throughout the year will only be good for about 12 months. If you can beans in your pressure Canner you can use them up to 5 years if you store them away from sunlight and keep the jars reasonably cool.

You may choose any variety of beans, from pole beans to blue lake beans. All of them are fine and do well in all recipes for green beans. To ensure freshness the Local Harvest should be picked and canned within just a few hours. You will be quite pleased with yourself if you grow the beans yourself, but even getting them from a local farmer is a great way to go.

When canning vegetables you will need home Canning Supplies like a Pressure Canner, Ball Canning Jars , canning lids and rings, a jar lifter and a funnel.

Wash the jars and caps in hot soapy water and then sterilize either in a dishwasher or Water Bath Canner. Place the jar lids and rings in a shallow pan and cover in hot, but not boiling water until ready to use.

When canning green beans, carefully get all the dirt off of them, washing them several times in cold water and then snip the ends.

You can decide how you want them to be cut, but generally it is accepted that pickled green beans are left tall and long, placing them vertically in the Ball canning jars.

Home canning recipes for green beans are usually cut to 1 1/2" and packed in to hot sterilized jars, leaving 1/2" head space.

Next you will add one tsp. salt for each quart jar, and cover with boiling water. Canning Foods like meats and vegetables of all kinds require that you use a pressure canner, not a water bath canner, to avoid the real possibility of botulism contamination.

Next take a clean damp dishcloth and wipe the jar rims, place the canning lids and rings, tighten the bands and place in the pressure cooker. Check your Pressure Canning Instructions carefully for processing times at your altitude, but a good estimate is that you will need to process them continuously at 11 pounds of pressure for about 25 minutes.

When they are cool, check for a seal by pressing down on the lids. They should not fluctuate in the least.

A hot side dish, this recipe is full of nutrients and is a family favorite of ours year round. No leftovers. I gave it this name so my 6 year old son would eat it. It also worked on my 12 year old. Boys!

Green Bean Mushroom Machine

  • 3/4 pound fresh or home canned green beans
  • 2 carrots, julienned
  • 1/4 cup olive oil
  • 1/2 pound mushrooms, fresh and sliced
  • 1/2 large white onion, sliced
  • 2 tsp minced garlic
  • 1/2 tsp black or white pepper to taste
  • 1/2 tsp seasoning salt
  • 1. Put the green beans, carrots and onions in a basket steamer with 1" boiling water. Cover and cook until just tender/crisp. drain and place in a covered dish.

    2. Warm the olive in a large fry pan along with the minced garlic. Add the mushrooms, carrots and onions. Saute till tender. Turn the heat to low, cover again and simmer 4 minutes. Add the green beans and all seasonings. Simmer again for an additional 4 minutes
