Now days it is at times necessary to look through Ball Canning Recipe books when we are trying to find out exactly how Grandmother made her delicious blackberry jam and other canned delights. For generations, Americans have been home canning their bountiful harvest of land and sea. To those who have recently discovered the satisfaction of Preserving Foods, we salute you for following such a time honored and rewarding tradition. For the seasoned canners who may be returning to home canning and looking for a refresher course, we encourage you to share your talents with the younger generation. Canning is a creative and fulfilling experience for all ages. We aim to save you endless hours searching through canning books by including some favorite Ball canning recipes. Lots of recipes require tomatoes. If you are feeling inspired to grow a few vegetables, the easiest to start with and the most useful ones are tomatoes. Learn How to Grow Tomatoes! Homemade barbecue sauce is always a hit at family picnics to liven up the summer! Use its rich tomato taste to enhance the flavor of grilled meats. The following selection is adapted from Ball canning recipes and makes about 3 quart jars.  Courtesy of credd Ball Canning RecipesBarbecue Sauce- 20 cups of peeled cored chopped tomatoes
- 2 cups finely chopped onions
- 3 finely chopped cloves garlic
- 1 tablespoon hot pepper flakes
- 1 tablespoon celery seeds
- 1 ½ cups lightly packed brown sugar
- 1 cup white vinegar
- 1/3 cup lemon juice
- 2 tablespoons salt
- 1 ½ tablespoon mace or nutmeg
- 1 tablespoon each of dry mustard, ginger, and cinnamon
1. Combine tomatoes, onions, garlic, hot pepper flakes, and celery seeds in a large saucepan. Bring to a boil over high heat, stirring constantly. Reduce heat. Cover. Boil gently for about 30 minutes, until vegetables soften. 2. When making Tomato Preserves in batches, use a food processor to extract all the pulp and liquid. Discard solids. 3. Return pulp and liquid to saucepan. Add the remaining ingredients. Return to a boil over medium high heat. Stir occasionally. Reduce heat and boil gently for about 30 minutes, until sauce thickens. Continue stirring frequently. 4. Ladle hot sauce into prepared jars. Allow a half inch headspace. Remove air bubbles, if necessary. Wipe rims of jars. Adjust two piece Canning Lids on securely. 5. Place jars in canner, making sure they are completely covered with water. Process for 20 minutes. After removing canner lid, wait 5 minutes. Afterward, remove jars to cool. Then label and store for a planned or impromptu family reunion. Courtesy of Texas to Mexico Strawberry Margarita Preserves- 6 cups halved hulled strawberries
- 2 cups cored peeled tart apples
- ¼ cup lemon juice
- 4 cups granulated sugar
- ½ cup tequila
- ½ cup orange flavored liqueur
- 2 tablespoons strawberry schnapps
1. Combine fruit and lemon juice in saucepan. Bring to a boil over high heat, stirring constantly. Add sugar, stir until dissolved. Reduce heat to simmer. Stirring often, continue cooking about 25 minutes, until mixture thickens. 2. Remove canner from heat and test gel. If gel has set, stir in tequila, liqueur, and schnapps. Return to medium high heat and bring to a boil, stirring constantly. Boil hard for 5 minutes, continuing to stir. Remove from heat and skim off foam. 3. Ladle hot preserves into awaiting hot jars, allowing ½ inch headspace. Adjust lids. Process preserves in canner for 10 minutes. Wait 5 minutes after removing canner lid. Then remove jars and cool. Label and store for an upcoming celebration! Then immediately dip into cold water so the skins slip right off.
