Ball Canning Recipes

  • Barbecue Sauce

  • 20 cups of peeled cored chopped tomatoes
  • 2 cups finely chopped onions
  • 3 finely chopped cloves garlic
  • 1 tablespoon hot pepper flakes
  • 1 tablespoon celery seeds
  • 1 ½ cups lightly packed brown sugar
  • 1 cup white vinegar
  • 1/3 cup lemon juice
  • 2 tablespoons salt
  • 1 ½ tablespoon mace or nutmeg
  • 1 tablespoon each of dry mustard, ginger, and cinnamon

1. Combine tomatoes, onions, garlic, hot pepper flakes, and celery seeds in a large saucepan. Bring to a boil over high heat, stirring constantly. Reduce heat. Cover. Boil gently for about 30 minutes, until vegetables soften.

2. Canning in batches, use a food processor to extract all the pulp and liquid. Discard solids.

3. Return pulp and liquid to saucepan. Add the remaining ingredients. Return to a boil over medium high heat. Stir occasionally. Reduce heat and boil gently for about 30 minutes, until sauce thickens. Continue stirring frequently.

4. Ladle hot sauce into prepared jars. Allow a half inch headspace. Remove air bubbles, if necessary. Wipe rims of jars. Adjust two piece lids on securely.

5. Place jars in canner, making sure they are completely covered with water. Process for 20 minutes. After removing canner lid, wait 5 minutes. Afterward, remove jars to cool. Then label and store for a planned or impromptu family reunion.
