Best Soul Food Recipes -Frugal Cooking for Dollar Stretcher Meals

Treat your family to a warm lasagna and crusty french bread for dinner tonight. Lasagna is one of the best comfort food recipes in it's class.

I always encourage people who love Italian cooking recipes to learn about Growing Tomatoes all year round. Just think of how many cans of tomato sauce, spaghetti sauce, tomato paste and chopped tomatoes the average household buys every year. Just grow your own and save a trip to the store. Ingredients for Lasagna

  • 1 lb Lean Ground Beef
  • 1/2 lb Sweet Italian Sausage
  • 1/2 Each Red, Yellow and Green Bell Peppers
  • 1/2 Medium White Sweet Onion, diced
  • 4 Cups Tomato Sauce
  • 2 Cups Stewed Tomatoes
  • 1/4 Cup Sugar
  • 3/4 lb each Montery Jack and Mozzarella Cheeses
  • 1 lb Ricotta Cheese
  • 3 Eggs, beaten
  • 1/2 lb Grated Fresh Parmesan Cheese
  • 12 Lasagna Noodles
  • Salt and Pepper to taste
  • Garlic, fresh or powdered
  • Italian Spices
  • Oregano
  • Fresh flat leaf Parsley-where available
  • White Wine Vinegar

Lasagna can easily be made into a vegetarian dish for those who need the best soul food recipes in a meatless version.

Start a pot of water boiling to hold the noodles. Brown ground beef with Italian sausage until cooked through. Drain into the colander.

Add the peppers and onion to fry pot, brown until semi-soft, then add the browned meat back in with peppers for 5 more minutes.

Add all the tomato sauce, stewed tomatoes, sugar, vinegar and all the spices except the parsley.

Stir the sauce and taste as you go, adding or holding back key ingredients as you like. Stir and thicken the sauce, then simmer for at least 30 minutes.

In a separate bowl, stir together the ricotta, eggs and parsley. Boil the noodles al dente, or to package directions.

Add a tablespoon of olive oil and a little salt, and stir gently to avoid having them stick together.

After they cook you will need to cool them-rinse in the colander, then place in a pan of cold water.

Avoid using an aluminum pan, instead choose stainless or glass pans.

Now begins the layering process. Simply lay flat a portion of your noodles on the bottom, follow with a ladle or two full of cooked sauce, next the jack and mozzarella cheeses mixed together.

Ladle the Ricotta mixture, follow again with the noodle layer and repeat process until the pan is full. Top with grated Parmesan cheese last.

Make a tent out of aluminum foil so it is not touching the noodles or cheeses, then bake at 375 degrees for 45 minutes.Enjoy one of family-securities best Crock Pot Meals.
